Baked Crispy Scallops with Roasted Sweet Potatoes

If you are tired of having cod or salmon for your seafood intake, try scallops. Scallops are easy to cook and neutral for all blood types, except for Type A Secretors and Type B Non-secretors.

Scallops can be seared on a hot pan and cook very quickly. Or you can bake them in the oven. In this recipe, you will learn how to top the scallops with a crispy topping. This creates a very interesting mouth feel–crispy on top and chewy at the bottom.

The ingredients of the topping include Parmesan cheese. However, it is an “avoid” for all types except for B Secretors. Unless you get it as a beneficial in your SWAMI personalized food list, it is off-limits to most. (However, if you are following the GenoType Diet, it is beneficial for Hunters, Nomads and Teachers, and neutral for the rest). In case Parmesan is an avoid for you, choose Pecorino cheese, as it is beneficial for all blood types.

The other ingredient, rice crumbs, can either be purchased or made at home by running a few rice cakes in a food processor.

For the scallops, choose ones from a clean source, preferably wild-caught. If you buy them frozen, just defrost the whole lot with the package on in a cold water bath. Rinse the scallops and pat dry with a paper towel before cooking.
